Day 75

Snack today was Multigrain Pretzels and chocolate coconut dip.  I had originally packed grapes but she wasn't in the mood for those today.

Lunch was yet another sandwich.  I have made a lot of those this week!  Today was tuna with cucumber slice, purple carrot flower, strawberry and orange slices.

Day 74

Tiffany over at Cute Food For Kids posted a candy necklace tutorial yesterday and I just had to try it!  So for snack today D has her candy necklace, but I did put it in with some Cracklin Oat Bran cereal to ease some of my guilt for sending her to school with candy.  LOL 

For lunch the girls had a spring vegetable mix (sugar snap peas, asparagus, carrots, onions and red peppers), tomato wedge, ham, homemade applesauce with vanilla goldfish crackers.

Day 73

M made her own lunch today and D had strawberries for snack.

It was another nice day and we had some errands to run so I kept it simple again.  PB & J pocket sandwiches with cheese and soy paper flowers and some grapes.

Day 72

M's lunch is bottom tier beef fried rice, ham/cheese flower, cucumbers, salami.  Top tier is grapes, orange slices, strawberries with purple and white carrot flowers.  D's snack is orange slices, strawberries with carrot flowers, grapes.  D and A's lunches are egg salad pocket sandwiches with cheese face, grapes and strawberries.  Keeping it simple.  It's a beautiful day out and I want to spend as much time outside as I can!

Day 71 and Easter


Today, we had a slow start getting back into the swing of things with Spring Break being over.  I don't have pics of M's lunch or D's snack.  D and A had some left overs for lunch today.  Mashed potato, ham bunny, broccoli tree with purple carrot flowers, some green beans, grapes, orange and strawberry.

We had a great Easter here.  It was a beautiful day.  We enjoyed every minute of it! 
I am embarassed to admit that this is my baby at 6:30 a.m. taking a bite out of her chocolate bunny.  Great way to start the day!  LOL  After the girls checked out their Easter baskets we made breakfast then moved on to preparing dessert for after our dinner.

We decided to put a spin on the Push Pop Cupcake.  We made push pop triffles.
I prepared a chocolate cake according to package instructions and baked it in a 9 x 13 dish.  Once it was completely cooled I used one of the push pop containers as a cookie cutter and cut out as many as I needed.  I made a dozen.  Then I sliced each cut out crosswise into thirds.
I put sugar free chocolate pudding in a pastry bag and lite cool whip into my Tupperware decorator to make filling easier.

We started with a layer of cake, then pudding, then cool whip until the containers were full.  The girls had a great time making them.  I kept the push stick out until I served them so they would store in my fridge easier.

Day 69


Since it is vacation week we have been having lots of play dates and sleep overs so we haven't been around for lunch too much! 

Today the girls are having a little bit of this and a little bit of that!  They have hot dog flowers, cherry tomatoes, blueberries and sandwich "cupcakes."

The cupcakes are just peanut butter sandwiches topped with chocolate coconut "frosting".

Chocolate Coconut Frosting
4 oz cream cheese
1/3 C coconut butter
1/2 C semi sweet chocolate chips, melted

Mix all ingredients together with an electric mixer until smooth.

Day 68

No school this week so we just have lunches.  Last Friday over at Cute Food For Kids she made some very cute chick sandwiches.  So I copied her!
These are ham and cheese, sitting in a "basket" of cherry tomato and grape "jelly beans".

This morning I just whipped up a quick box of sugar free instant pudding for D to have for snack today.
Lunch is hotdog/egg daisys, asparagus stem, strawberry "leaves", cherry tomatoes and animals picks.

Day 66

This week at D's school is "Spirt Week"  each day has it's own theme.  Monday was Wear Your Favorite Sports Team, Tuesday was Beach Day, Wednesday was Green Team Day (the kids wore green and brought in money donations for clean water in Liberia), today was "Mixed Up" Day.  The kids dressed up and the teachers dressed down and they had some mixed up activites that they were doing...so with that in mind, D has Scooby Snack dog bone shaped graham crackers and an applesauce pouch for snack.  Tomorrow is Pajama Day!


Also going along with Mixed Up Crazy Day I made the kids "Icecream" for lunch.  I warmed about 2Tbs of peanut butter in the microwave just until it was soft and mixed it with a diced banana.  I used that mixture to fill the cone, topped with sliced strawberries and a small "scoop" of toasted marshmallow fluff.  They will have turkey, cheese and whole grain crackers for an afternoon snack.

Day 65

M has stir fry beef and broccoli with pasta and some grapes for lunch.  D has cereal bar hearts and a few cheez its for snack.

D's friend was over again today and D's request before she left was "please make some cute food for lunch".  So I guess make your own pizza was "cool" but not "cute".  So being under pressure and with it being a dark, dreary, rainy day, I was completely uninspired!  We ended up with hotdog ocotopus (ocotopi?) and crabs, bread onigiri with a pick and nori features and cherry tomatoes.

Days 62 and 63

Friday was crazy hectic in the morning...like most mornings so I didn't get any pics of M's lunch or D's snack.  It was a beautiful day out and we spent the day outside which is why I didn't get to posting the lunch until today!
The girls had mini ham quiche, carrots, tomatoes and ranch dip with an orange pepper flower.

D's snack this morning is yogurt and Kashi Berry Blossom cereal.


D had a friend over from school today so I set up a "make your own pizza bar" there is diced tomatoes, cheese, turkey pepperoni and yellow pepper hearts and flowers.

Here are their masterpieces.  I have to say I am very proud that D's has a little bit of everything on it.  Her friend stuck with cheese and tomatoes.  She was skeptical about the tomatoes instead of sauce but she ate every bite!

Day 61

D has some homemade trail mix.  It consists of cheerios, strawberry/banana yogurt puffs, cinnamon goldfish, chocolate yogurt covered raisins and dried cherries.  She also has a couple of animal crackers.


Quick and easy today.  Chicken sandwiches on goldfish bread and bananas.

Day 60

D has a homemade coconut chocolate granola bar and a few dried apple slices for snack today.
I used a different recipe, this one has rice krispies in it.  D really seems to like it.

D had a friend over from school today.  I didn't get much info from the mom so I wasn't really sure what to make for lunch.  I wasn't sure of her likes and dislikes.  I hedged my bets and went with pb&j and apple bunnies.  It was a success!  I made 3 plates all the same.
Coconut Chocolate Chip Granola Bars II

1/4 C butter
1/4 C coconut oil
1/3 C sugar
1/3 C agave syrup
1/4 C flour
1/2 tsp coconut extract
2 C Rice Krispie cereal
2 C rolled oats
1 C shredded unsweetened coconut
1/2 C mini chocolate chips

In a small sauce pan melt butter and coconut oil together.  Add sugar, agave syrup, flour and extract.  Stir till smooth, set aside to cool.  In a large bowl, mix rice cereal, oats, coconut and chocolate chips.  When butter mixture has cooled add it to the cereal mixture, stir to coat evenly.  Then pour into a greased 13 x 9 in pan.  Press with wet hands or waxed paper into one even layer.  Bake in a preheated 350 oven for about 20 minutes or until lightly browned.

Day 59

I was so cold yesterday and in the mood for comfort food.  I whipped up a Pumpkin Dip and that pretty much satisfied my craving!  D has the pumpkin dip with wheat thin sticks and a couple strawberries.

I ran some errands this morning so D and A have "Froggie" burgers, dill gherkins and home baked white sweet potato chips.

Pumpkin Dip
1 (8oz) package of cream cheese, softened
1 (15 oz) can of pumpkin puree
1 box instant vanilla pudding (I use sugar free so it is the 1 oz box)
1 tsp pumpkin pie spice

Beat the cream cheese and pumpkin puree together until smooth, add the pudding mix and spice and beat till thickened.  Chill.  I serve it with cracker sticks, pretzel sticks, graham crackers, nilla wafers...whatever you're in the mood for....it sort of tastes like pumpkin cheesecake.  Very, very yummy!!

Day 58

I spent too much time enjoying the outdoors yesterday I didn't get around to getting organized till this morning so I was in a rush to get M's lunch ready. There was no time for pics before she had to run out the door.  I made her a salami sandwich and a garden salad with asian sesame ginger dressing.  D has yogurt and Cracklin' Oat Bran cereal with a few sprinkles.

Big change in the weather from this weekend.  It was beautiful out all weekend and today it's cold, dark and rainy...YUCK!  We have some egg "flowers", red pepper, cucumber, chicken/apple sausage.

Day 57

Today M has green beans, carrots, grapes and some whole grain cheez its, a ham sandwich in an Arnold Deli Fold.  I'm not a bread eater, never have been, but both my kids love bread so when I find something new I like to let them try it.  I guess I'll get the verdict when M gets home from school.  It seemed like a lot of bread to me though.  D has a Chobani Champions yogurt with Kashi Berry Blossom cereal.

I had a meeting at school today that ran longer than I had anticipated so thankfully I had my freezer stash to go to!  So the girls had mini deep dish pizzas, carrot/raisin salad and green grapes.
